Having fun with honey

Honey Wafers
Sprinkle an even layer of honey powder on a sheet of baking paper or tin foil- leave no gaps.
Put into a hot oven for 30 seconds to a minute. The powder will melt into little droplets.
While still hot take a wet knife and spread the melted powder over the paper.
It will harden almost immediately. It will peel off the paper easily.
Use pieces as decoration, crumble on top of desserts or ice-cream
COOKING WITH HONEY POWDER
Give baked goods a new twist of flavor with honey powder.
You can use honey powder to sprinkle over cereal, desserts or fruit.
Toss nuts in honey powder after roasting them(while still hot).
You can add it to dry rubs for meat and poultry along with the usual spices.
Honey powder can be added to recipes for cookies, cakes and breads in place of other sweeteners.



Toss halved cored apples with honey powder.
Put apples (arranged in a circle)and a good sprinkle of extra honey powder into bottom of a greased baking dish.
Cover with puff pastry.
Cook 20-30 minutes 200 degrees C until pastry is golden and syrup is bubbling.
Take out of oven.
Put a plate on top and turn upside down.
Gently ease the baking dish away
3 tbs tbs gelatine
1½ cups sugar
1 cup water
½ cup water
80g honey powder
Icing sugar or coconut
Wet baking paper and line tin Combine gelatine and first measure of water.
Leave to swell for 10 minutes.
Place sugar, honey powder and second measure of water in large saucepan and boil 15 minutes
Cool till lukewarm.
Beat till very thick and white.
Pour into lined tin
Chill until set
Cut and dust with icing sugar or coconut
½ litre milk
50g sugar
4 eggs
3 drops vanilla
Honey powder
Grease the inside of 6 ramekins
Sprinkle a layer of honey powder into the bottom of ramekins. (This should cover the bottom (approx ½cm thick)
Beat the eggs,sugar and vanilla in a bowl
Warm the milk,and whisk into the beaten egg mix.
Pour gently into the ramekins
Place into a roasting tin half full of water
Cook in a moderate oven(120-250 degrees C) forapprox 30 mins When cool loosen edges and turn out.
